"1 in 133" - It's a Big Deal!

May is National Celiac Awareness Month. To bring community awareness to the inaction of the FDA to finalize and implement standards for gluten-free labeling (the process began four years ago) a group of gluten-free activists and members of the community are organizing the 1st Annual Gluten-Free Food Labeling Summit. The summit is the brainchild of Jules Dowler Shepard, gluten-free activist, author and found of Jules Gluten-Free.

The event is being held May 4th in Washington, D.C. at the Embassy Suites D.C. Convention Center located at 900 10th Street NW. The Summit will host Capitol Hill legislators, top Celiac disease researchers, gluten-free community leaders and food corporations. The highlight of the event will be a 12 foot gluten-free / dairy free cake which, according to Jules "symbolizes the Big Deal that federal gluten-free food labeling standards mean to the estimated 3 million Americans living with Celiac disease and the more than 18 million Americans living with gluten-intolerance. 21 million Americans!" Yes, that is a big deal.

To support this important cause visit the 1 in 133 website. Sign the summit petition that urges the FDA to act now, write a letter to the FDA and donate.

According to the 1 in 133 Press Release, "Proceeds will benefit the American Celiac Disease Alliance (ACDA), a non-profit volunteer organization that advocates for the needs of people with celiac disease and gluten sensitivity.  The ACDA spearheaded the grassroots campaign which was instrumental to the passage of FALCPA. Your support of "1 in 133" can help motivate the FDA to provide the safe and uniform labeling for the millions of people that are gluten intolerant."





Gluten-Free Basic Buttermilk Pancakes

Gluten-Free Buttermilk PancakesI adapted my recipe for gluten-free buttermilk pancakes from a recipe which appears in one of my favorite pancake and waffle cookbooks, The Totally Pancakes and Waffles Cookbook by Helene Siegel.

Ms. Siegel says of her Basic Buttermilk Pancake recipe, "Consider this an insurance policy - just in case you run out of mix." I love that! And she's right. All you need to make this recipe for light and tender gluten-free pancakes is your own favorite gluten-free all purpose mix and basic pantry staples.

And, if you don't have buttermilk you can easily make your own in about 5 minutes with milk and vinegar. All good reasons to enjoy these classic pancakes often.

P.S. - Gluten eaters love these pancakes too!

GlutenTox Home Test Kit Results Product ReviewGlutenTox Home is a new test kit that allows people with Celiac disease and gluten-intolerance to quickly and safely test foods and drinks for gluten - at home. I recently had the opportunity to try a GlutenTox Home test kit and have used it to test several gluten-free products that I use that are inherently gluten-free, like corn flour, but aren't actually labeled "gluten-free" or "Certified Gluten-Free" by the Gluten-Free Certification Organization. So how do I really know if my corn flour is cross-contaminated with gluten, or not?
