Korean Seasoned Spinach (shigumchi namul)Namul refers to any seasoned vegetable side dish on the Korean table, and can include everyday Western vegetables like watercress or spinach. But Koreans eat everything under the sun, so seasoned fiddlehead ferns, chrysanthemum leaves and bellflower roots are also popular types of "namul".

In addition to gracing the table as banchan (Korean side dishes), namul is also used as an ingredient in Korean mixed rice and noodle dishes like bibimbap.
