The Encyclopedia of Sandwiches

For some years I've been considering writing a sandwich cookbook. But there are several available and frankly I'm intimidated by the idea of writing a book. Just as well. Susan Russo's latest book, The Encyclopedia of Sandwiches (Quirk Books, 2010), is better than what I would have done. With over 100 sandwich recipes from a grilled cheese to a muffaletta it's a thorough if not complete source of sandwich ideas - many of which you've probably never heard of. Read more...

Meyer's Lemon Pie

This recipe for a Meyer's Lemon pie is adapted from a combination of a lime icebox pie and a lemon chiffon pie. Meyer's lemon are rapidly growing in popularity - they're sweeter and, to my mind, more lemony than the common lemon - but they're still not easy to find around here so when I do spot them I buy them. Trout Meuniere

Some years ago I was reading a memoir and the author described eating Trout Meuniere. He was sitting on a restaurant patio in France beside a stream from which the trout had been caught shortly before. It was served with some sort of shredded potatoes and asparagus. His description set my salivary glands on over-drive. Meuniere means, roughly, "in the miller's wife's style" and refers to the fact that the filet is dusted in flour. It's then fried in butter and, when the trout is done, the browned butter is seasoned with lemon and parsley to make a sauce. Recipe here...
