Di Carlo's replacement comes the day after his side's 3-2 loss at home to lowly Cesena which leaves them 14th in the Serie A.
"I respect Di Carlo but we had no other choice but to part company because the results weren't good," said Garrone.
"I like Cavasin. I don't know whether he'll just be a temporary replacement, what counts now are the results."
Cavasin, 55, previously coached Serie A sides Fiorentina and Brescia, and has been without a club since leaving Swiss outfit Bellinzona.
