Chinese chicken salad is a great recipe when you want to serve something that is quick and easy to make. The only thing that takes any time is baking and shredding the chicken breast, and you can do that earlier in the day. I came across some ripe mangoes at Chinatown last weekend, and couldn't pass them up! I used them to make this flavorful mango pudding recipe from cookbook author Stephen Wong. It replaces the heavier cream commonly used to make mango pudding with evaported milk. I've included photos of each step of the process.
