Cinco de Mayo gives us a great excuse to indulge in some Mexican-inspired recipes, some of which may already be a weeknight staple. Low Fat Easter Recipes

My younger daughter's birthday is sometimes just before Easter, and sometimes just after. Last year it coincided with Easter Sunday. She finds this confusing. I tried to explain that, unlike Christmas, which is always December 25th, the date of Easter varies from year to year--something to do with a Paschal full moon. As long as the Easter bunny remembers to show up on time, I don't think my daughter will worry too much.

Easter Sunday falls on April 24th this year. So here is a selection of low-fat Easter recipes so you have some time left to put together a family-friendly low-fat Easter brunch, lunch or dinner.

Smoothies are a great way to get some of your daily fruit quota and an excellent way to use up over-ripe bananas. If you have a particular yearning for an out of season fruit, say, peaches in December, opt for the frozen variety. Add some protein and calcium by using low-fat yogurt or milk, and you'll enjoy a healthy start to your day, or a great liquid snack to tide you over until dinner.
