Paprika-rubbed beef
Serve garnished with fresh rosemary.
[Serves 4]
2 large rump steaks
½ tbsp sea salt flakes
½ tbsp smoked paprika
½ tbsp cumin, ground
½ tbsp dried oregano
Olive oil
FOR THE GARLIC POTATOES
Olive oil, for frying
4 potatoes, peeled, cubed and parboiled
2 garlic cloves, chopped Sea salt and black pepper Rosemary, to serve
1. Allow meat to come to room temperature. Mix together sea salt, smoked paprika, cumin and dried oregano. Rub olive oil all over steaks and coat with spice mixture. Heat a griddle pan and cook meat on both sides for 4–5 minutes. Allow to rest for 10 minutes before slicing.
2. For the garlic potatoes: heat olive oil, add potatoes and sauté until golden. Add garlic and toss well to coat. Cook for another minute. Drain on paper towel. Season and serve garnished with fresh rosemary.
