Arugula Salad with Mango Vinaigrette and Cranberry Cheese

Fresh mango emulsifies this vinaigrette, giving it the kind of creamy consistency usually found in egg-thickened dressings. If you happen to have some spiced pecans on hand, by all means use them. If not, toasted pecans will do.

Ingredients:
Flesh from 2 large mangoes, cut into 1/2-inch pieces (2 cups)
Finely grated zest of 1/2 lime and freshly squeezed juice of 1 lime (1/2 teaspoon zest and 1 tablespoon juice)
1 tablespoon balsamic vinegar
1/2 teaspoon dried thyme
1/2 cup olive oil
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
12 ounces baby arugula or arugula salad mix (about 16 cups), rinsed and dried
5 ounces Wensleydale cranberry cheese, cut into thin slices (may substitute thin slices of sharp cheddar cheese and 1/2 cup dried cranberries)
1/2 cup toasted pecan halves, preferably cut in half lengthwise (see NOTE)
Directions:
Combine 1 cup of the mango, the lime zest and juice, balsamic vinegar, thyme, oil, salt and pepper in a blender. Puree on high speed for 1 minute to form an emulsified, smooth vinaigrette. The yield is 1 1/4 cups.

Place the greens in a large bowl. Add 3/4 cup of the vinaigrette and toss to coat evenly, then divide among individual plates.

Top each portion with a slice of the cheese, some of the remaining mango and the pecans.

Serve immediately, passing the remaining vinaigrette at the table, if desired.

NOTE: Toast the pecans on a baking sheet in a 350-degree oven for several minutes, until lightly browned and fragrant.
