Generally, rice is soaked and rinsed in order to remove the starch from it which prevents rice from sticking together. Once the starch is removed rice takes lesser time to cook. This way your dish gets a subtle aroma. If you cook it for long it will lose its aroma. However, certain rice varieties like basmati should not be rinsed.
