A tablespoonful or two of wine, liqueur, or rum, a sprinkle of sugar, and a few dots of butter will do the trick. A truly different, taste appealing dessert is the following grapefruit cream cake with its zestful filling and fluffy seven minute frosting.

GRAPEFRUIT CREAM CAKE Two eight or nine inch layers 3 cup shortening lb cups sugar 1 tablespoonful crated frrape-. fruit rind 1 teaspoon crated lemon rind unbeaten li cup fresh rrapefruit juice i cup water 214 cups sifted all-purpose flour 2'i teaspoons baking powder teaspoon salt Cream the' shortening, sug ar, and rinds well. Add eggs one at a time, beating thoroly after each addition. Add juice and water alternately with sifted dry ingredients. Beat batter for Vz minute.

Bake in greased, waxed paper lined pans at 375 degrees for 30 minutes or until done. Cool for 10 minutes. GRAPEFRUIT CREAM FILLING For two-lajser cakej 1 cup sugar 4 cup cornstarch Vi teaspoon salt 1 cup fresh grapefruit Juice 2 tablespoons butter 2 ezz yolks, slightly beaten Vt teaspoon grated lemon rind 1 tablespoon grated grapefruit rind Combine sugar, cornstarch, and salt in saucepan. Add juice and cook over medium heat, stirring constantly, until very thick. Add butter, then stir a little of the hot mixture into the eggs.

Turn the eggs into the rest of the mixture and stir over low heat about 2 minutes. Cool and fill cake. with a Twist Appearing below is a recipe for Danish coffee cake made in a pretzel shaped twist filled with raisins. It would be an ideal accompaniment for a hospitable pot of coffee with friends or neighbors. Additional recipes you will need in following Mary Meade's menus for the week also are given below.

DANISH TWIST Six servings V4 cup milk 14 cup sugar 1 teaspoon salt 2 tablespoons shortening Vi cup warm, not hot, water lukewarm for compressed yeast 1 package dry or 1 cake compressed yeast 1 et, beaten Hi 1o 3 cups sifted flour I lup raisins 1 egg, beaten Confectioners' sugar Scald milk. Stir in sugar, salt, and shortening. Cool to lukewarm. Measure water into large mixing bowl; sprinkle or crumble in yeast.

Stir until dissolved. Stir in lukewarm milk mixture. Add beaten egg and about half the flour. Beat until smooth. Add raisins.

Stir in remaining flour. Turn dough out on lightly floured board. Knead until smooth and elastic. Place in greased bowl; brush top with shortening. Cover; let rise in warm place until doubled in bulk.

Punch down; turn onto lightly floured board. Roll into long slender roll. Twist roll and place on greased baking sheet; shape into a large pretzel. Tuck ends of roll under edge of pretzel to keep dough from untwisting. Brush with re maining egg; sprinkle with confectioners' sugar.

Cover and let rise until doubled about 1 hour. Bake at 350 degrees 20 to 30 minutes. APPLE HAM CASSEROLE Four to six servings 3 cups diced, cooked ham 2 tablespoons prepared mustard 2 apples, cored and sliced 2 tablespoons lemon juice Vb cup brown sugar, packed firm 1 teaspoon grated orange rind 2 tablespoons flour Arrange ham in greased, shallow baking dish. Spread mustard over ham. Arrange apple slices over ham mixture and sprinkle with lemon juice.

Combine sugar, rind, and flour; sprinkle over ham. Bake at 350 degrees 30 to 35 minutes. FROZEN PUDDING Eight to 10 servings 1 angel cake 9 to 10 inches la diameter 1 quart chocolate ice cream 10 dried figs 1 teaspoon cinnamon Vi teaspoon cloves Vx teaspoon nutmeg Vi cup walnuts, chopped fine Vi cup glazed cherries and pineapple, chopped fine 2 tablespoons bourbon optional 1 cup heavy cream, whipped Vi cup confectioners' sugar 1 teaspoon vanilla flavoring Buy or bake an angel cake. Cool and remove it from pan. Wash and dry pan; return C4TIUS eOMMIISlON.

Put 2 slices to gether with cottage cheese about cup; leave buttered sides out. Saute in skillet until brown on both sides. Saute beef, onion, and green pepper in but ter for 10 minutes. Add season ings, soup, extract, and water Cook 10 minutes longer.
