Mushroom Barley Soup recipe - The Daily Meal

Ingredients
  • 1 1/4 gallons seasoned homemade chicken stock
  • 1 1/4 pounds kosher beef bones
  • 2 cup finely chopped onions
  • 1 1/2 cups finely chopped carrots
  • 1 cup finely chopped celery
  • 1 teaspoon ground white pepper
  • 8 ounce pearl barley
  • 15 ounce mushrooms, sliced
Directions
  1. To a large pot, add 1 1/4 gallons seasoned homemade chicken stock, 1 1/4 pounds kosher beef bones, 2 cups finely chopped onions, 1 1/2 cups finely chopped carrots, 1 cup finely chopped celery and 1 teaspoon ground white pepper. Bring to a boil. Reduce heat and simmer 1 hour.
  2. Add 8 ounces pearl barley to stock mixture, bring to a boil. Reduce heat and simmer until barley is soft, about 1 hour.
  3. Remove beef bones. Add 15 ounces sliced mushrooms and simmer 30 minutes.
